Our first was Nantucket Off-Shore Renaissance Rub which will bring a vibrant rebirth of flavor to Italian cooking and grilling.  With a harmonious and herbaceous blend of oregano, rosemary, and garlic punctuated by sesame seeds, hot red pepper, sweet sun-dried tomato bits, and lemon zest this one is tough to beat. The Mt. Olympus rub is excellent on chicken or fish, the Prairie Rub is just awesome on steaks or burgers and the Rasta Rub and Bayou Rubs spice things up in a special way!

You Will Love... Willingham's "Surprise Burgers"

I know that we can’t get enough of Willingham’s Cajun Hot seasoning? Well here is a fantastic cheese burger recipe to spice things up a bit.  This is a twist on burgers that comes from the Willingham’s suggestions sheet that is inserted into all of our shipments.

Combine:

3 LB of Ground Chuck or Sirloin

1 Egg

2 Tablespoons of Willingham’s Original Mild Seasoning

  1. Pull out of 1/2# or 1/3# hunks of the meat mixture,
  2. Form each burger around a cube or chunk of your favorite cheese.
    In center of each burger, cut a hole the size of your finger for even cooking.
  3. Place on Grill over medium/high direct heat and cook to your desired temperature.

Grilling Tip: Use the Grill Friends Steakhouse Burger Press and lay in some meat, place some cheese slices or shredded cheese in the middle of the meat and put more meat on top. Press down on the Grill Friends Steakhouse Burger Press and it will create the steakhouse signature “thumbprint” that helps cook the burger evenly.

Can’t get enough of Willingham’s Cajun Hot seasoning? Well here is a fantastic recipe for some sauteed mushrooms that comes from the Willingham’s suggestions sheet that comes with all of our shipments.

Wash and slice 1 LB of Mushrooms 1/4″ Thick
Melt in a skillet:
1 Stick of Margarine or Butter
1 Tablespooon Willingham’s Cajun Hot seasoning or Willingham’s Original Mild Seasoning
1 Teaspoon of Vermouth

    Add Mushrooms and vermouth and simmer for 10 minutes. Drain and serve with toothpicks. Or, put some Willingham’s Original Mild Seasoning on a burger, grill it up and have a mushroom burger!

    Nantucket Off-Shore Prairie Rub is seriously the ninja in your spice cabinet! We have found that it is great as a seasoning on hamburgers and really makes the perfect burger. But when it comes to beef, Nantucket Off-Shore Prairie Rub really delivers. Here is a simple recipe for Steak au Poivre, or Pepper Steak!

    3 Tablespoons of Nantucket Off-Shore Prairie Rub

    1 Tablespoon Extra Virgin Olive Oil

    Steak or Filet Mignon

    Kosher Salt

    1. Place meat in a baking pan or on a plate and rub the meat with olive oil.
    2. Cover the meat with the Nantucket Off-Shore Prairie Rub and apply Kosher Salt to taste
    3. Grill the steak to desired tenderness over high direct heat (4 minutes per side)
    4. Remove meat from grill and let stand for 5 minutes.

    Serves 2

    Bayou Rubbed Shrimp Kabobs Recipe

    Nantucket Off-Shore Bayou Rub is a fantastic seasoning that brings home the flavors of the bayou in one simple blend. If you have not tried Grill Friends Double Kabob Skewers this would be the time to give them a try as they make grilling kabobs less hazardous! Here is a Bayou Rubbed Shrimp kabob recipe that is sure to please.

    1 LB cooked and peeled shrimp

    2-3 Teaspoons of Nantucket Off-Shore Bayou Rub

    1 Teaspoon Extra Virgin Olive Oil

    Juice of half a lemon

    1. In a mixing bowl, combine Olive Oil, Lemon Juice and shrimp. Toss the shrimp.
    2. Sprinkle in Nantucket Off-Shore Bayou Rub and toss again until the shrimp is evenly coated.
    3. Skewer the shrimp using Grill Friends Double Kabob Skewers and some of your favorite veggies.
    4. Grill the shrimp over medium direct heat for 5 minutes, turning frequently.
    5. Serve over rice

    Serves 4
