You have seen plenty of savory recipes, so how about something a little sweet? That’s right, you can even grill dessert! Grilling brings out natural sweetness, which is why it’s a great option for grilling fruit like figs. Grilled figs in a dumpling make an amazing dessert.
Ingredients
- 2 sheets pie crust
- 12 dried figs
- ¼ cup bourbon
- ½ cup walnuts, chopped
- ¼ cup + 1 tablespoon maple syrup (divided)
- 1 teaspoon ground cinnamon (cinnamon is one of our favorite underrated seasonings)
- ½ teaspoon ground nutmeg
- 2/3 cup (5oz) mascarpone cheese
- ½ teaspoon vanilla extract
- 1 large egg
- 1 tablespoon water
Directions
- Warm the pie crust to room temperature.
- In a small saucepan, combine the figs and bourbon. Cover with 1” water.
- Cover with a lid and cook over low heat until the figs are plump (about 15-20 minutes).
- Remove the figs from the heat and drain. Let the figs cool for 15 minutes and then pat dry with a paper towel. Cut figs into quarters and set aside.
- In that same saucepan, combine walnuts with ¼ maple syrup, cinnamon, and nutmeg. Cook over medium-low heat, stirring constantly until the liquid has evaporated (5-7 minutes).
- Once the liquid is gone, put the walnuts on a parchment-lined baking sheet. Put them in the freezer for about 10-15 minutes.
- In a small bowl, combine vanilla, 1 tablespoon maple syrup, and mascarpone cheese.
- To create the dumpling, use a 4” round cutter to cut 12 circles (remove scraps).
- Spread about 1 tablespoon of the mascarpone mix on one half of the pie crust circle (within a quarter inch of the edge). Top with 2 teaspoons of walnuts and 4 quartered figs.
- You’ll use an egg wash to complete your dumpling. In a bowl, whisk egg and water together. Use a brush to put the egg wash on the edges of the crust. Fold the crust over the filling and seal with fork presses.
- Once the dumplings are sealed, brush the egg wash on both sides of the pies.
- Freeze the pies for 20 minutes to set on a baking sheet lined with parchment.
- Now the best part… grilling! Remove the pies from the baking sheet, and put them on a greased grill rack. Use medium direct heat for 5-7 minutes on each side until golden.
Serve these dumplings warm with a dollop of whipped cream or honey. You could even glaze them with one of Texas Pepper Jelly’s Rib Candy Glazes! Figs caramelize easily with the heat from the grill, so these have a deliciously-sweet taste. Grab one before they’re gone!
