Grilled Balsamic Chicken With Avocado : Taste of California

Grilled Balsamic Chicken is light and fresh, and the perfect California style recipe with the addition of avocados. Although it’s one of the most basic recipes on this list, it’s a fan favorite at every BBQ. It’s so good, you’ll want to make it every night this week.

BBQ Pro California

Ingredients

  • ¾ cup balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 2 teaspoons Italian seasoning (recommended: Roman Holiday Italian Seasoning)
  • 1 teaspoon garlic salt (substitute: garlic powder)
  • Salt and pepper (to taste)
  • 4 boneless, skinless chicken breasts
  • 4 slices avocado (about 2 avocados)
  • 4 slices fresh mozzarella
  • 4 slices tomato (about 2 tomatoes)
  • 2 tablespoons fresh basil (for garnish)
  • Balsamic glaze (as a drizzle)

(We know it seems like a lot of ingredients, but you probably have most of it in your pantry already.)

Directions

  1. In a small bowl, whisk together balsamic vinegar, garlic salt, honey, oil, and Roman Holiday Italian Seasoning. Season the mixture with salt and pepper, to taste.
  2. Place the chicken breasts in a container. Pour the mixture on top and let marinate for at least 20 minutes.
  3. After 20+ minutes, heat the grill to medium-high. You’ll want the chicken to be cooked to an internal temp of 165, which will take about 8 minutes on each side. Learn how to grill chicken (with gorgeous sear marks) here.
  4. Top each chicken breast with one slice of mozzarella, avocado, and tomato (in that order). Cover the grill so the cheese will melt. Cook for 2 minutes.
  5. Remove the chicken from the heat. Garnish with basil and drizzle with balsamic glaze.
